Young sweet potato fingers roasted in honey and salt and served drizzled in extra honey and black pepper

Ingredients
400gm young sweet potato fingers
100g honey
Sea Salt and Black Pepper to taste
2tblspns chopped curley parsley
Juice of one lemon
Preheat the oven to 190C
Cut the very ends off the sweet potato fingers and using a clean tea towel, rub the root hairs off.
Place on a baking tray lined with baking paper and drizzle with half the honey (heated if necessary to pour). Sprinkle with salt.
Cook for approx 15 – 20mins until the inside of the fingers are cooked and soft and the outside is getting crunchy.
Remove from oven and place on a serving dish and drizzle with the remaining honey (heated if necessary to pour)
Sprinkle with extra sea salt and then freshly cracked black pepper. Scatter the chopped parsley over the cooked sweet potato fingers and squeeze some lemon juice over.
Serve while hot.
