Method

1 In a bowl, whisk together the soy sauce, sesame oil, honey, rice vinegar, lemon juice, and Dijon mustard.

2 Stir in the grated ginger, minced garlic, sesame seeds, chilli flakes, and black pepper.

3 Cut your Bluefin Tuna into steaks or cubes, depending on your intended preparation.

4 Place the tuna in a shallow dish or a resealable plastic bag, and pour the marinade over the tuna.

5 Cover and refrigerate for 20-30 minutes for a light marinate or up to 2 hours for a more intense flavour. Be careful not to marinate for too long, as the acidity in the marinade can begin to break down the fish’s texture.

6 Remove the tuna from the marinade, letting any excess drip off. Grill or sear each side for 1-2 minutes (for a rare or medium-rare finish).
