Preheat Oven to 180C

Remove the leaves from the cauliflower and place florets up on a lined baking tray.

In a small bowl mix the mustard, olive oil and salt. Brush the cauliflower with the mustard and oil mix using a pastry brush making sure that all surfaces are covered including the stems. There should be about 1/2 of the mixture still left when you are done.

Place cauliflower uncovered in the oven and cook for 40 mins or until golden brown and when it is soft enough for a skewer to be pushed easily into the centre.

Remove from the oven and and baste again with the remaining mustard and oil mixture.

Combine the parmesan and parsley and scatter over the top of the roasted cauliflower.

Serve hot.
