Preheat oven to 180C

Add onion, sugar, balsamic vinegar, olive oil and salt into a small saucepan and cook over a low heat until the onion has softened and caramelised. Drain and allow to cool.

Cut the roasted cauliflower into largish pieces and place into the bottom of 22cm non stick greased oven proof frypan or oven proof dish.

Spread two thirds of the sliced caramelised onion on and amongst the cauliflower in the frypay. Reserve the remaining onion.

Combine the eggs and cream and whisk lightly to combine. Add the pepper and half the cheese and mix well and then pour over the cauliflower and onion. Top the mix with the left over cheese and onion.

Bake uncovered for approx 30mins until set and the top is golden brown.

Serve warm with a side salad.
