Prep time: 3hrs 30mins (includes 3hrs to macerate)
Cook time: 45mins
A rich, sweet, and tangy condiment perfect for pairing with cheese, meats, or sandwiches.
Ingredients
1.1kg Red Onions, sliced
420g Brown Sugar
110ml Balsamic Vinegar
Instructions:
Place the sliced red onions in a bowl. Add brown sugar and balsamic vinegar. Mix well and let sit for 3 hours, allowing the flavors to develop and the onions to soften.
Transfer the mixture to a saucepan and bring to a boil over medium heat. Stir occasionally and let it cook for approximately 45 minutes, until the liquid has reduced, caramelised, and thickened to a jam-like consistency.
Once thick and glossy, remove from heat. Spoon into sterilised jars while hot and seal. Let cool before storing in the fridge.
Spread on toasted sourdough with goats cheese.
Serve with grilled meats or burgers.
Add to a cheese board for a sweet-savory kick.
