A fabulous colourful vegan dish to serve for lunch or at any party.

Ingredients
600g purple sweet potato, peeled and roasted until soft
200g chickpeas, cooked and drained
2 gloves garlic, crushed
80ml virgin olive oil
Sea salt flakes and freshly cracked black pepper to taste
3tblspn tahini paste
A few extra cooked and roasted chickpeas to serve
A few chopped chives to serve
Place roasted purple sweet potato, chickpeas, tahini, garlic and olive oil in a food processor and process until smooth.
Season with sea salt and cracked black pepper.
Place hummus in a serving bowl and top with a few roasted chickpeas, chopped chives and rosemary flowers.
