Ingredients
- DRESSING
- 2 tbsp soy sauce
- Juice of 1.5 limes
- 2 star anise
- 1/2 cm fresh red chilli - finely sliced without seeds
- 1 tsp sesame oil
- HONEY SOY MUSHROOMS
- 1 tbsp olive oil
- 300g Swiss/white mushrooms - cut into quarters
- 1 tsp honey
- 1 tsp soy sauce
- CRISPY MINCE
- 1 tbsp olive oil
- 1 clove garlic - crushed
- 2 cm ginger - finely sliced
- 350g chicken mince
- 1 tbsp honey
- 1 tbsp soy sauce
- 1 tbsp sweet soy sauce
- GARNISH
- 4 leaves romaine lettuce
- 1 small cucumber - grated
- 1 carrot - grated
- 1/4 cup coriander with stems
First mix all the dressing ingredients and set aside.
Heat 1 tbsp of olive oil in a large pan over medium heat. Add garlic, ginger and mince and stir until lightly brown. Add honey, soy sauce & sweet soy sauce and stir until mince is ready. Simmer until ready to serve.
Then, heat 1 tbsp of olive oil in another pan over medium heat, add mushrooms and stir until golden. Add honey and soy sauce and stir for 5 minutes
Start preparing your lettuce wrap. First place mince in the lettuce leaf then add cucumber, carrot and mushrooms on top
Take star anise out of the dressing
Drizzle dressing on top and garnish with coriander
