Use your left over hot cross buns to make this delicious bread and butter style pudding.

Ingredients
5 hot cross buns (left over or stale is fine)
5 eggs
1 cup milk
1 cup thickened cream
1tspn cinnamon
1 tspn nutmeg
1/2 cup castor sugar
1/4 cup honey for glazing
Preheat oven to 180C
Butter or spray the inside of an oven proof baking dish.
Break up the buns into medium size pieces and layer them in the baking dish. Make sure you put the pieces with parts of the cross on facing up on the very top.
In a bowl, combine the cream, milk, eggs, sugar and spices and lightly whisk.
Pour the egg mixture over the buns in the baking dish. Push the pieces of bun down so they can soak up all the egg mixture. Leave for ten minutes for the buns to be completely soaked through.
Place dish into the preheated oven and cook for approx 50 – 60 mins until the custard has set. If the top is going too brown you can cover it lightly with a piece of alfoil and continue cooking.
Heat the honey in the microwave for 30 seconds and then brush the hot honey on top of the hot pudding
Serve warm with extra cream.
