Delicious apple tea cake enriched with the flavour of calvaldos

Ingredients
2 Large apples, peeled, cored and chopped into 1cm pieces
140g sugar
140g SR Flour
1/2tspn Baking Powder
1/4tspn Salt
110g Salted Butter
2 Large Eggs
60ml Calvados
1tspn Vanilla Extract
Icing Sugar for dusting
Preheat oven to 180C
Spay and line a 23cm spring form pan with baking paper.
Cream the butter and sugar in a stand mixer with a paddle attachment until pale and fluffy.
Add eggs, one by one and mix well and then add the vanilla essence and calvados and mix until all combined.
Combine the flour, baking powder and salt and mix well then add to the butter mixture and stir gently until all combined.
Add the chopped apple and stir through.
Pour the mixture into the lined baking pan and place into the oven and cook for approx 25 – 30mins until a skewer inserted into the middle comes out clean.
Allow to cool slightly before removing from the pan.
Dust with icing sugar and serve with cream. Can be served warm or at room temperature.
