Ingredients
- 1 cup sugar
- 1 large egg
- 1/2 cup canola oil
- 1 tblspn vanilla extract
- Pinch salt
- 1/2 tspn baking soda
- 1/2 tspn baking powder
- 1.5 cups plain flour
- 1 tspn cinnamon
- 2 large apples, peeled, cored and diced into 1cm pieces
- 1/2 cup brown sugar
- 4 tblspns water
Preheat oven to 180C
Line muffin pan with 18 paper small patty pans.
In a bowl sift together the flour, baking soda, baking powder, cinnamon and salt.
With a stand mixer, cream together eggs, vanilla and sugar until pale yellow, add oil and whip again until light.
Add sifted dry ingredients to the creamed mixture along with the water and mix well. Add the diced apples and mix by hand. The mixture will be quite stiff and if too stiff to spoon into patty pans mix in a little more water.
Spoon mixture into patty pans until they are approx 3/4 full, almost to the top.
Make sure the brown sugar is well separated and then sprinkle the top of each patty pan mixture generously with the brown sugar.
Bake in the oven for approx 20 mins until a skewer placed into the muffin comes out clea
