Crunchy on the outside, chewy on the inside, the best of both worlds in this Aussie biscuit.
Preheat oven to 170C (or 160C fanforced) Cover two baking trays with greaseproof paper.
Place the following ingredients into a large bowl: Raw Castor Sugar, Plain Four, Desiccated Coconut, Rolled Oats
Mix well and make sure there are no lumps in the sugar or flour.
Place the butter into a bowl and melt on high in the microcwave. Once melted, add the golden syrup and hot water. Mix until the golden syrup has dissolved. Stir into the mixture the BiCarb Soda.
This will make the mixture foam. As soon as the mixture foams, add this mixture to the dry ingredients and mix well until all combined.
Take teaspoons of the mixture and squeeze together forming a small ball like shape. Place on the trays allowing room for spreading. Using a fork, flatten the balls slightly.
Bake for 25 – 30mins until golden brown all over and soft to touch in the centre.
