Meet Sue and James Tilly, the passionate duo behind HillTilly Distillery. Nestled on their off-grid family property in the Adelaide Hills, they produce small-batch, hand-crafted gin and vodka using only spring water, sugar, yeast, sunshine—and a whole lot of love.

With no connection to the electricity grid or mains water, HillTilly runs on solar power and crystal-clear Adelaide Hills spring water, making their spirits as clean and pure as the land they come from.

HillTilly began as a vision grounded in care for people, planet, and purpose. Inspired by family values, environmental sustainability, and a desire for community-connected business, Sue and James launched the distillery in July 2021—after years of learning and refining their craft.

They focus on seasonal, local, and organic ingredients wherever possible, putting their ethics into every bottle. Their commitment to quality, sustainability, and community means that every drop is made with intention—from their hands to yours.
