Preheat oven to 180C

Place the cubed pumpkin on a lined baking tray in a single layer and bake until just starting to go soft. Approx 10 minutes.

In a bowl add the partially cooked pumpkin, feta, parmesan and spinach leaves. 

In another bowl combine the eggs and milk and lightly whisk. Add this to the pumpkin mixture.

Combine the flour, baking powder, salt and pepper and then add to the wet ingredients and gently stir to combine making sure all flour has been incorporated.

Spoon into individual small muffin papers sitting in a muffin tray. 

Bake for 20 mins until golden brown and cooked through.
