Method

  1. Heat a generous drizzle of olive oil in a frying pan over medium heat. Add the sliced garlic and cook gently until just starting to colour.

  2. Add the mushrooms and cook until tender and lightly browned.

  3. Stir through the parsley and season with salt to taste.

  4. Bring a large saucepan of salted water to the boil. Cook the pappardelle for about 4 minutes or until just tender.

  5. Lift the pasta directly from the water into the mushroom pan and toss gently to combine.

Serve immediately. Buon appetito!
