Method

  1. Heat the ghee in a large frying pan over medium heat. Cook the semolina, stirring continuously, for about 5 minutes or until it starts to brown.

  2. Add the sugar and sultanas and cook, stirring, for 1 minute. Add the orange juice and zest, mix thoroughly, and cook for 2 minutes.

  3. Pour in the milk (or water) and cook, stirring vigorously, for 8–10 minutes, or until the liquid is completely absorbed.

  4. Garnish with orange segments and serve hot.
