Method

  1. Cook the meat in a frying pan with enough bulgogi sauce to keep it moist. 

  2. Combine cherry tomatoes and red onion in a bowl. Drizzle with olive oil, squeeze over half the lime, add one teaspoon fermented garlic, coriander and a pinch of salt.

  3. Mash the avocado and season with olive oil, remaining lime juice, fermented garlic and salt.

  4. Build your tacos with meat first, then tomato salsa. Top with kimchi and extra coriander. Hot kimchi pairs well with BBQ beef, while radish kimchi works with hot pork.

  5. Serve guacamole and cheese on the side so everyone can help themselves.
