Method:

  1. Prepare the Mushrooms: Heat 1 tablespoon of OMGhee in a large pan over medium-high heat. Add the mushrooms and cook undisturbed for 2–3 minutes until they start to brown. Stir occasionally and continue cooking until golden and crispy.
  2. Add Garlic & Herbs: Reduce heat to medium, add the remaining OMGhee and garlic, and sauté for 1–2 minutes until fragrant. Stir in the fresh herbs and season with salt to taste.
  3. Toast the Sourdough: While the mushrooms cook, pan-fry sourdough slices in OMGhee until golden and crispy.
  4. Assemble: Spread whipped feta (or your chosen creamy base) onto the toasted sourdough. Pile on the herby mushrooms and top with sliced avocado.
  5. Serve & Enjoy: Finish with extra fresh herbs and a sprinkle of salt. Serve warm and enjoy your flavorful brunch toast!
