Method

  1. Heat olive oil in a large pot.
  2. Sauté onion and garlic until soft and golden.
  3. Stir in curry powder.
  4. Add water, stock cubes, chopped apple, and sweet potato.
  5. Simmer for about 30 minutes, or until vegetables are tender.
  6. Allow to cool slightly, then blend until smooth.
  7. Return to the pot and stir through coconut milk.
  8. Gently reheat and serve with a sprinkle of black pepper.
  9. For even richer flavour, enjoy the next day or freeze for later.
