A bright, festive cocktail made with Ginny Pig Christmas Gin, fresh cherries and mint. It’s light, refreshing and just the thing for a warm December evening.

Ingredients
50 ml Ginny Pig Christmas Gin
25 ml cherry syrup
10 ml fresh lime juice
2 large mint leaves
Fever-Tree Wild Raspberry Tonic
Fresh cherry and mint sprig, to garnish
Method
Fill a tall glass with plenty of ice.
Add the gin, cherry syrup, lime juice and mint leaves to a cocktail shaker. If you don’t have a shaker, use a clean jar with a tight-fitting lid.
Shake well until chilled.
Strain into the prepared glass.
Top with Fever-Tree Wild Raspberry Tonic.
Garnish with a cherry and a mint sprig.
