Method

  1. Preheat oven to 200°C fan forced.
  2. In a bowl, whisk together the soy sauce, honey, garlic, ginger, sesame oil and vinegar.
  3. Place the chicken thighs into a baking dish in a single layer and pour over the marinade. Turn the chicken to coat well.
  4. Bake uncovered for approximately 40–45 minutes, turning once halfway through cooking. Spoon the pan juices over the chicken during cooking to help create a sticky glaze.
  5. In the final 5 minutes, switch the oven to grill if you’d like extra caramelisation on the skin.
  6. Scatter with sesame seeds and sliced spring onion before serving.

Optional Extras

  • Add a squeeze of lime before serving
  • Sprinkle with fresh chilli for heat
  • Add a teaspoon of miso paste to the marinade for extra depth
