The smooth creaminess of avocado combined with the saltiness of feta in an easy to make and delicious dip.

Ingredients
1 large avocado, peeled and chopped roughly
1/2 small red onion, peeled and finely diced
1/2 bunch coriander (include stems)
100g cup crumbled feta
1/4 cup extra virgin olive oil
Juice of half a lemon
Salt and pepper to taste
Place the diced onion in a pan with a little olive oil and cook over low heat until soft and tender. Take off heat and allow to cool.
Add cooled onion into a bowl with avocado, crumbed feta, coriander and most of the olive oil.
Using a stick blender, puree until smooth. Add lemon juice to taste and extra olive oil if needed to get a smooth consistency.
Season with salt and pepper.
Serve in a bowl with toasted bread and vegetable sticks.
