Place the diced onion in a pan with a little olive oil and cook over low heat until soft and tender. Take off heat and allow to cool.

Add cooled onion into a bowl with avocado, crumbed feta, coriander and most of the olive oil. 

Using a stick blender, puree until smooth. Add lemon juice to taste and extra olive oil if needed to get a smooth consistency.

Season with salt and pepper.

Serve in a bowl with toasted bread and vegetable sticks.
