Method

  1. Place the chicken thighs in a large bowl. Add the BBQ sauce, lime juice and salt, then toss until thoroughly coated.
  2. Cover and marinate in the fridge for at least 30 minutes. Remove from the fridge about 15 minutes before cooking.
  3. Combine the glaze ingredients in a small bowl and set aside.

Barbecue

Preheat the barbecue to medium-high, approximately 200°C, and lightly oil the grill.

Cook the chicken for 5–6 minutes on each side. Brush generously with the glaze during the final 2 minutes, turning as needed until sticky and lightly caramelised.

Air fryer

Preheat the air fryer to 200°C.

Arrange the thighs in a single layer and cook for 10–12 minutes, turning halfway through. Brush with the glaze during the final 2 minutes. Cook in batches rather than overcrowding the basket.

Oven

Preheat the oven to 220°C, or 200°C fan-forced.

Place the chicken on a lined baking tray, preferably on a wire rack. Bake for 15–18 minutes, brushing with the glaze during the final few minutes. Place under the grill briefly for extra caramelisation.

The chicken should be completely cooked through and reach at least 75°C in the thickest part. Rest for 3–5 minutes before serving.

Serving suggestion

Serve with crispy potatoes, coleslaw or a simple fresh salad. For a milder family-friendly version, reduce the sriracha or leave it out completely.
