A simple, flavour packed linguine with broccoli, garlic and chilli, brought together with generous olive oil for an easy midweek meal.

Ingredients
1 packet Pasta Pepe Linguine
2 garlic cloves, peeled and sliced
1 hot chilli, chopped
Olive oil and salt
2 large heads of broccoli, leaves and stems included. Peel stems and chop heads and stems into pieces
Method
Heat a generous drizzle of olive oil in a large frying pan over medium heat. Add the garlic and chilli and cook until the garlic is lightly golden and fragrant. Set aside.
Meanwhile, bring a large saucepan of salted water to the boil. Add the Pasta Pepe Linguine and chopped broccoli, including the stems and leaves, and cook for around 10 minutes or until al dente.
Drain the pasta and broccoli, reserving 1 cup of the cooking water.
Return the pasta and broccoli to the pan. Pour over the garlic, chilli and olive oil mixture, season with salt and toss well. Add a little reserved pasta water as needed to create a silky, creamy sauce.
Finish with an extra drizzle of olive oil and serve immediately.
