Method

  1. Place the cucumbers, apples, yoghurt and basil into a blender.

  2. Add olive oil, a pinch of sea salt and white pepper.

  3. Blend until smooth, adding a little cold water if needed to reach a pourable consistency.

  4. Taste and adjust seasoning, adding lemon juice if you like a little extra brightness.

  5. Chill in the fridge for at least one hour before serving.

To Serve

Pour into chilled glasses or bowls and finish with a drizzle of olive oil and a few basil leaves. Serve cold.

Market Tip


Feel free to mix it up using what’s in season. Swap basil for mint or try pear instead of apple for a different take. If you want to keep it ultra light, you can leave the olive oil out altogether, add a little extra yoghurt for creaminess, use avocado for richness, or simply drizzle the oil over the top when serving rather than blending it through.
