Method

  1. Heat half the butter and olive oil in a large cast iron skillet over high heat.

  2. Add the whole prawns and cook for about 2 minutes on each side until just coloured.

  3. Add the remaining butter and oil, followed by the garlic, peeled prawns, lemon zest and chilli.

  4. Cook for a further 1–2 minutes, turning the prawns and basting with the buttery sauce, until just cooked through.

  5. Sprinkle with fresh parsley and remove from the heat.

  6. Serve immediately with lemon wedges and plenty of crusty bread.
