Method

  1. Fry the bacon and onion until golden, then set aside to cool.

  2. In a slow cooker (or large saucepan), add pumpkin, bacon, onion, apples, garlic, ginger, lemon juice and stock.

  3. Stir well, cover, and cook for around 4 hours (adjusting for your slow cooker settings).

  4. Blend with a stick blender until smooth.

  5. Season with salt and pepper to taste.

  6. Serve hot with a generous dollop of Alexandrina Crème Fraîche.
