Vinegars that will become a pantry staple
Robin Day from Domain Day had a long and distinguished career as a chief winemaker, which led him “by accident” into Domain Day balsamic and vino cotto range of vinegars. We will let Robin share his story, but his vinegars are utterly delicious with both sweet and savoury dishes.
Vino Cotto means cooked (cotto) wine (vin) and is made from the excess grape juice from the wine making process. It is a popular choice at the market as it is a wonderful flavoursome addition to marinades, and sauces, making it a pantry staple.
Made from barrel aged concentrated grape juice, its sweetness and caramelised flavour is an ideal addition to a variety dishes including sauces and stir-fry. You can also use it when baking seasonal fruit and vegetables for that extra flavour.
Made from wine grapes grown in his vineyard at Mount Crawford, which happens to be the highest and coolest in the Barossa (450 metres above sea level) it makes you wonder whether this climate may contribute to the quality of his vinegars.
